What is Suya and Surf & Turf?
Suya is a traditional smoked spiced meat skewer which originates from Nigeria, and is a popular food item across West Africa. Suya is a large part of Nigerian culture.
Surf and Turf is a combination of seafood and meat. The "surf" part refers to the seafood and the "turf" part refers to animals that feed on vegetables.

Cook Time - 30 mins
This recipe has five servings.
Suya Surf and Turf Ingredients:
- 300g Chicken Breast Mini Fillets
- 300g of Raw & Peeled Prawns
- 3 tbsp of Suya Powder
- 1 tsp Garlic Powder
- 1 tsp Ginger
- 1 Maggi Cube
- 1 tsp Paprika
- 1 tsp Cameroonian Black Pepper
-1 tsp of pimento
-2 tsp of oil
-1 tsp of baking powder/cornflour (Optional)
Suya Surf and TurfMethod:
Begin with two tablespoons of your preferred oil poured over the proteins. Next, sprinkle (find a different word) seasonings and start to mix it to ensure a coating of the chicken and prawns
Marinate for minimum ten minutes if ,you have time to enhance the flavour, even overnight if you prefer.
Heat a frying pan over medium heat and spray eight sprays onto the frying pan.
Cook until the meats begins to brown, about 7 minutes on each side.
When the chicken and prawn is browned, remove and set aside.
Pasta Ingredients: Optional of the seasoning you can cook pasta to your preference
- 375g of Rummo Mafalde
- 10 sprays of Fry Light Sunflower Oil Cooking
- One Maggi Cube
- 1 tbsp of Mixed Herbs
Pasta Method: Optional you can cook pasta to your preference
Add water into a small-medium pot, so that it reaches up to three-quarters the way up then, let the water start to boil on medium heat.
Once, the water reaches boiling point, add 10 sprays of 1-calories cooking spray and the seasoning for the pasta. Steer the seasoning and cooking spray so it is well combined into the water.
Then add your pasta into the water slowly until all of the pasta is inside.
Cook your pasta to your preference if you want it Al dente (firm when bitten without being hard or chalky) or Stracotto (has been cooked until soft).
Once cooked, drain the pasta. But put a cup under the strainer, so you can capture some pasta water equivalent to one cup.
Which it is now a combination of pasta water and broth, due to the inclusion of the Maggi Cube.
Surf and Turf Sauce Ingredients:
- 3 Tablespoons of Butter
- 1 Tablespoon of Guja Paste
- One Red Onion
- 150ml of Light Double Cream
-1 Cup of Seasoned Pasta Water
- 100g Sun-dried Tomatoes
- 1 Tablespoons of Suya
-1 Teaspoon of Paprika
-1 Teaspoon of Garlic Powder
-1 Teaspoon of Ginger
- 50g of Parmesan
- 100g of Cucumber for Garnish
Surf and Turf Sauce Methods:
Add two tablespoons of light butter into the same frying pan over medium to low heat. To deglaze the previous seasoning stuck on the plate.
Once deglazed you want to put your chopped vegetables such as your red onion and sun dried tomatoes.
Increase the heat to medium and cook until the onion starts to become translucent.
When translucent add your light double cream into the frying pan, stirring to make everything well combined.
Five minutes later, add your Parmesan cheese and seasoning, repeat again and make until well combined.
Once cheese has melted into the sauce, you want to add the seasoned pasta water. However add it gradually, stirring in between pours.
Penultimately, add your pasta into the sauce until well combined.
Finally, distribute the food into the five servings and add 20g of chopped cucumber and 5g of chopped parsley to each serving.
In the end, you'll be presented with a plate of spicy hot sizzling Suya Surf and Turf Pasta.
